A flour tortilla made to order, cheese melted to the very edge, and trompo crisped over charcoal. The reason there's a line on Fridays.
Our story
Don Chuy lit his first trompo in 1987 on a street corner in Saltillo, Mexico. Today his granddaughter runs the fire in San Antonio, still marinating the meat with the same recipe — written in pencil in a notebook that never leaves the kitchen.
